Hi Gang! This is a great recipe to get your weekend started. This one will be totally Paleo style. Breakfast is the most important meal of the day, but often it’s the most difficult to prepare since most of us don’t have a lot of time in the morning. Since today is Saturday and most folks are off work, I chose to share this recipe today. This recipe is quick to make and hopefully will help you with your Paleo diet.

Ingredients:
- 1 Sweet Potato – Medium Sized, Peeled and Washed
- 4 Eggs
Instructions:
Before starting with the ingredients, preheat your oven.
First, take the sweet potato and grate it in a bowl or plate using a cheese grater. Get a muffin tin tray and grease 4 cups with coconut oil (or use olive oil if you don’t have that). Add the grated sweet potato on the side of the cups and the bottom using your fingers, so you create some type of “nest” with it. After you’re done put it in the oven and bake it for 5-8 minutes so it gets crusty, but make sure to not burn it.
After taking the tin tray out from the oven, crack an egg inside each sweet potato crust and bake for another 10 minutes, till the eggs are cooked. Let them cool until removing from the muffin tin tray and they’re ready to consume.
