Happy Tuesday everyone! Chicken Puttanesca is a delicious Italian recipe that is great for anyone who may be doing the Whole 30 diet, as it fits all its requirements. This dish doesn’t require a lot of ingredients and it is easily prepared. My girlfriend loves this meal so we make it about once a month, whether we’re on the Whole 30 or not. Try it out!

- 4/5 Boneless Chicken Breasts
- 1 14oz Can of Crushed Tomatoes
- 1 Cup Cherry Tomatoes
- ½ Cup of Pitted Kalamata Olives
- 1 Cup Onion (Sliced)
- 3 Garlic Cloves (Rough Chopped)
- 1 Tbsp Olive Oil
- ¼ Cup of Fresh Basil
- Salt and Pepper
First heat some olive oil in a large pan/skillet. Rinse your chicken breasts, dry them and marinate them with some salt and pepper. Put the chicken breasts in the pan and cook it for about 4 minutes on both sides and then put it aside. If the chicken isn’t completely cooked, don’t worry as you have to put it in the pan again to cook it with the sauce.
After removing the chicken, add the onion in the skillet and cook until they have a golden color. Then add the garlic and cook it for 1 minute. After that, put the crushed tomatoes in the pan, some basil, salt and pepper. Add on top the chicken breasts that we put aside before and then spread the cherry tomatoes and the olives.
Simmer uncovered for about 15-20 minutes, until the chicken is done and the sauce is thickened a bit. Serve a chicken breast with some sauce on the side and you can add some more basil for taste.
