Whole 30 Eggplant Sandwich

Besides being rich in dietary fibers, Vitamin B1 and copper, eggplants are also very delicious vegetables. So this healthy Whole 30 recipe will be even better for all of you who enjoy eating eggplant. 

Whole 30 Eggplant Sandwich

Ingredients:

  • 1 Eggplant
  • 1 Sliced Tomato
  • 2 Tbsp Avocado Oil
  • 1 Cup Ricotta Cheese
  • Fresh Basil (1 Bunch)
  • 1 Tbsp Salt
  • Seasonings of your choice

Instructions:

First you need to preheat your oven so it’s ready when we need it. Start by slicing the eggplant into thick discs (around 1 inch) and put them on a baking sheet. Add on top of them the avocado oil and some seasoning that you want to add more taste. Flip the eggplant slices and do the same thing on the other side.

Place the baking sheet with the eggplants in the oven to bake for 4 minutes. Then, simply rotate the sheet and let it bake for another 4 minutes. After doing this, remove the eggplants and flip them. Put the baking sheet back in the oven for another 4 minutes and then rotate it again.

Now the eggplant is done so we can start preparing our delicious Whole 30 sandwich. Take 1 slice of eggplant, add 1 Tbsp of Ricotta cheese, a slice of tomato, basil leaves and then top it with another eggplant. Do the same thing for the rest of the eggplant slices and then you can finally taste this delicious recipe, which also has a lot of nutritional value.
