Soups are definitely one of the best dishes you could eat. Not only do they taste delicious,
but they also have countless health benefits. Soups help your digestion, are packed with
nutrients, their vitamins and minerals stay intact and they are considered a natural healer. That being said, we will now give you a great soup recipe. I think you will love this one!

Ingredients:
- 6-8 Cups of Broccoli Florets
- 1 Sliced Leek
- 1 Shredded Carrot
- 3-4 Cups Vegetable Stock
- 2 Cloves Minced Garlic
- 1 Cup Coconut Milk
- 2 Tbsp Ghee/Coconut Oil (Use which one you want)
- Salt and Pepper
Instructions:
Take a pot or saucepan and melt some ghee or coconut oil in it. Then add the garlic and the sliced leek and cook for about 4 minutes, until the leek is softened. Add the broccoli and then cook for another 5 minutes while stirring the ingredients in the pot.
Add the vegetable stock, the shredded carrot and then let the soup simmer on medium-high heat. Cover the pot and let it cook for around 20 minutes. You should know the soup is done when the broccoli is soft.
Blend the soup using an immersion blender or any kind of blender you might have in your kitchen. After it’s done add the coconut milk and some salt and pepper. Bring the pot in the stove again and let it cook for another 5 minutes.
This recipe is great as you can use it as a starter dish or even you main dish if you’re on a
stricter diet. Plus, this broccoli-leek-carrot-soup is a Paleo friendly recipe so that makes it
