White Bean Soup with Polenta Croutons

This recipe we’re about to tell you is the perfect soup recipe that will warm all of your body after a cold winter day. Since we need some extra proteins during winter, this soup contains beans, which means you will get plenty of proteins along with other nutrients, so go ahead and give it a try!

White Bean Soup with Polenta Croutons

Time: 25 Minutes


  • Three 400g Tins of Cannellini Beans
  • Half 500g Pack of Cubed Polenta
  • 600 ml Vegetable Stock
  • 1 Sliced Onion
  • ½ Lemon (Zested and Juiced)
  • 2 Crushed Garlic Cloves
  • 2 Tbsp Olive Oil
  • Rosemary


Heat 1 tablespoon of olive oil in a saucepan and add the onion. Cook for about 4 minutes until it is softened, then add the garlic and cook for 1 other minute. Add the beans (make sure they are drained rinsed), the vegetable stock and the rosemary and keep stirring while adding them.

Simmer for about 10 minutes then remove half of the mixture from the pan and use an immersion blender to make a puree (or any other kitchen blender you might have). Add it back in the pan along with lemon zest, lemon juice and some seasoning.

Heat in another pan the other tbsp of olive oil and fry the polenta cubes for about 2-3 minutes, until they are gold and crispy.

Serve the soup with the polenta croutons on top, the parmesan or vegetarian cheese and some rosemary. Enjoy the recipe and don’t forget to send us some feedback if you liked it or not!
