Pumpkin Creamy Vegan Soup

That being said next recipe is a pumpkin soup, which is very delicious and all our vegan readers will love it because it is indeed vegan! This soup takes some time and effort to prepare but it is definitely worth it.

Pumpkin Creamy Vegan Soup

Ingredients:

  • One 4 Pound Sugar Pie Pumpkin
  • 1 Yellow Onion (Chopped)
  • 4-6 Garlic Cloves (Minced/Pressed)
  • 4 Cups Vegetable Broth
  • 2 Tbsp Maple Syrup (Use Honey if you don’t want to make it vegan)
  • ½ Cup Coconut Milk (Full Fat)
  • 4 Tbsp Olive Oil
  • ½ Tsp Sea Salt
  • ½ Tsp Ground Cinnamon
  • 1/8 Tsp Cloves
  • Small Dash of Cayenne Pepper (Optional)
  • Black Pepper (Fresh Ground)
  • ½ Tsp Ground Nutmeg
  • ¼ Cup Pepitas (Green Pumpkin Seeds)

Instructions:

First preheat your oven to 425 o F. Slice the pumpkin in half and remove the seeds. Then
slice again the halves in half and rub them with 1 Tbsp of olive oil. Spread them on a baking sheet and bake them for around 35 minutes, until they are easily pierced with a fork.

Get a soup pot and heat the remaining 3 Tbsp of olive oil in it. Add the onion, garlic and
some salt. Stir the ingredients and cook until the onion becomes translucent (for around 8-10 minutes).

While the onion is preparing, get the baked pumpkin and peel off the skin because we don’t need it. After the onion is done, add the pumpkin, the cayenne pepper, the cinnamon, nutmeg, cloves and some black pepper. Stir all of them and you can break up the pumpkin into smaller pieces since it should be soft enough. Add the 4 cups of vegetable broth and cook in high heat until it boils. Then, reduce the heat and let the soup simmer for around 15 minutes

While you wait for the soup to cook, add the Pepitas in a skillet on low-medium heat and
cook them until they have a golden color. Make sure not to burn them.

When the ingredients in the pot are done cooking, add the coconut milk and the maple
syrup. Let the soup cool and then use an immersion blender (or any other type of blender you might have) to blend the mixture until it is smooth. When serving, add some Pepitas on top of the soup and it is ready! Enjoy the recipe and let us know if you liked it or not.
