Asparagus is a “light” vegetable, low in calories and fat but a great source of fiber, folate and vitamins A, C, E and K. All these nutrients you can get from this Paleo soup recipe below. It’s very easy to make so you can try it today!

- 2 Lbs Asparagus (Chopped)
- 2 Russet or Sweet Potatoes (Peeled, Chopped)
- 1 Leek (Chopped)
- 4 Cups Vegetable Stock
- 2 Garlic Cloves (Minced)
- ½ Cup Coconut Milk
- 2 Tbsp Coconut Oil
- Sea Salt
- Black Pepper (Freshly Ground)
Get a soup pan and heat the coconut oil on medium heat. Add the garlic and the leek and
cook them for about 4 minutes. Then add the potatoes and the asparagus and let all
ingredients cook for another 3-4 minutes.
Put in the vegetable stock, cover the saucepan and let it simmer for about 15-20 minutes,
